blueberry pie recipe


This pie is awesome.  My mom found the recipe in a really old Courier-Journal article and has made it many times.  The recipe called for peaches but she improvised with a number of other fresh fruits, and blueberries were one of the best experiments. This pie is really easy to make, and has a delicious custard/chess pie-esque taste that is wonderful paired with fresh blueberries.

1 cup sugar

1/3 cup butter or margarine

1/3 cup flour

1 egg, beaten (or use ener-g egg replacer and water)

1/2 tsp. vanilla

1 tsp. almond extract

enough blueberries or peach slices to fill a pie crust

frozen pie crust (make sure it’s vegetarian if you are- they sometimes use  lard.  whole foods has vegan pie crusts.)

Directions: Mix butter, sugar, and egg in bowl.  Add vanilla and almond extracts.  Fill frozen pie crust with berries (or peaches). Pour sugar mixture onto pie and spread out evenly.  Bake pie for 350 degrees for 60-70 minutes.
